Felix being serious at Roots
Felix Chamorro graduated from the University of Gastronomic Sciences (Slow Food) in Piedmont, Italy. After collaborating with the Slow Wine Guide and gaining experience in renowned wineries in Piemonte, he went on to work for several years in Michelin-starred restaurants such as Relæ and Brace in Copenhagen — one of the leading cities in contemporary gastronomy.
He is currently the CEO of Rufino Group, which operates five venues across Copenhagen, including Rufino Osteria and Roots Vinbar. Alongside this, he works as a consultant for high-end restaurants and focuses on the research, promotion, and distribution of terroir-driven, low-intervention wines, as well as selected food products aligned with a Slow Food-based philosophy.
His work today is closely connected to a more authentic and non-stereotypical interpretation of Italian identity, as well as a contemporary vision of hosting — one that reinterprets figures such as the traditional “oste”, bringing them into a modern context. Through this, he continues to support small-scale producers who embrace sustainable and forward-thinking practices, often rooted in long-standing traditions.
